{"id":2202,"date":"2026-09-14T22:03:33","date_gmt":"2026-09-15T05:03:33","guid":{"rendered":"http:\/\/www.rahulnair.net\/blog\/?p=2202"},"modified":"2026-09-14T22:03:33","modified_gmt":"2026-09-15T05:03:33","slug":"palak-paneer-ravioli","status":"publish","type":"post","link":"http:\/\/www.rahulnair.net\/blog\/2026\/09\/14\/palak-paneer-ravioli\/","title":{"rendered":"Palak Paneer Ravioli"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">I first made this dish as part of a multi-course dinner where I wanted to put a twist on the classic Indian dish&nbsp;<a href=\"https:\/\/en.wikipedia.org\/wiki\/Palak_paneer\">palak paneer<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The basic idea was pretty simple: instead of serving cubes of paneer in spinach gravy, I would put the paneer inside ravioli and use the palak as the sauce underneath. The nice thing about this approach is that the flavours remain very recognizably palak paneer even though the presentation is completely different.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It also turned out to be a pretty good dinner-party dish. Almost everything can be made ahead of time, and at service all you really need to do is warm the spinach sauce and boil the ravioli for about a minute.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pasta Dough<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">For the pasta itself I recommend using the dough from <a href=\"https:\/\/edicionesanteriores.madridfusion.net\/en\/recipe\/black-truffle-explosion\/\" data-type=\"link\" data-id=\"https:\/\/edicionesanteriores.madridfusion.net\/en\/recipe\/black-truffle-explosion\/\">Alinea&#8217;s Black Truffle Explosion recipe<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I have used that dough several times for filled pasta and it works extremely well. It rolls thin without becoming too fragile, seals nicely, and has enough strength to hold a reasonable filling.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The recipe calls for kneading it for at least 15 minutes but I find that it takes more like 30 min of kneading to get everything properly incorporated and non sitcky. Make the dough in advance, wrap it tightly, and let it rest overnight before rolling.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Paneer Filling<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">The filling has very minimal ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>100g paneer, grated<\/li>\n\n\n\n<li>Salt<\/li>\n\n\n\n<li>Black pepper<\/li>\n\n\n\n<li>Chilli powder<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><a href=\"http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1431.jpeg\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1431-1024x768.jpeg\" alt=\"\" class=\"wp-image-2209\" srcset=\"http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1431-1024x768.jpeg 1024w, http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1431-300x225.jpeg 300w, http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1431-768x576.jpeg 768w, http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1431-1200x900.jpeg 1200w, http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1431.jpeg 1280w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Grate the paneer fairly finely and season it with salt, pepper, and chilli powder to taste. It stays soft after cooking but still has enough structure that you know you are eating paneer rather than just another soft cheese filling.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Making the Ravioli<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>100g paneer filling<\/li>\n\n\n\n<li>100g prepared fresh pasta dough<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Once the pasta dough has rested, roll it out into thin sheets &#8211; I like to get it all the way from #0 to #8.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I used a ravioli mould for this, which makes it much easier to get consistent sizes and also speeds things up when you are making a larger batch.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Lay the first sheet of pasta over the mould and gently press it into the cavities.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><a href=\"http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1433.jpeg\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1433-1024x768.jpeg\" alt=\"\" class=\"wp-image-2211\" srcset=\"http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1433-1024x768.jpeg 1024w, http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1433-300x225.jpeg 300w, http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1433-768x576.jpeg 768w, http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1433-1200x900.jpeg 1200w, http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1433.jpeg 1280w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Add a small amount of paneer filling to each cavity. A cookie cutter works well for both cutting the ravioli and sealing the edges.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At this point the ravioli can be set aside until service. If you are storing them in the refrigerator, make sure they are sitting on floured parchment paper to prevent them from sticking.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Depending on the size of your ravioli, your yield will vary. With the mould and cutter I used, 100g of prepared pasta dough produced about 30 ravioli. If you have any paneer left over, I recommend using it to make sandwiches.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Palak Sauce<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">For the sauce you need the following:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 lb fresh spinach<\/li>\n\n\n\n<li>1 tbsp butter<\/li>\n\n\n\n<li>5 cloves garlic<\/li>\n\n\n\n<li>100g cream<\/li>\n\n\n\n<li>Salt<\/li>\n\n\n\n<li>Chilli powder<\/li>\n\n\n\n<li><a href=\"https:\/\/www.amazon.com\/Everest-Masala-Kitchen-King-grams\/dp\/B004QV6DD2\">Kitchen King masala<\/a><\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Start by blanching the spinach briefly in boiling water. This involves putting the fresh spinach into boiling water for 30\u201360 seconds and then immediately transferring it to ice water. The blender is useful here because I wanted a very smooth, restaurant-style spinach sauce rather than something with visible pieces of spinach.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Set the puree aside while you build the rest of the sauce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Melt the butter in a pan and gently saut\u00e9 the garlic. I generally add the Kitchen King a little at a time and taste as I go. It helps give the sauce its familiar Indian flavour profile without having to build up the spice mixture from a long list of individual ingredients.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The cream is mostly there to round out the spinach and give the sauce a slightly richer texture. I would not add too much because you still want the spinach to be the dominant flavour.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><a href=\"http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1430.jpeg\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1430-1024x768.jpeg\" alt=\"\" class=\"wp-image-2222\" srcset=\"http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1430-1024x768.jpeg 1024w, http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1430-300x225.jpeg 300w, http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1430-768x576.jpeg 768w, http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1430-1200x900.jpeg 1200w, http:\/\/www.rahulnair.net\/blog\/wp-content\/uploads\/2026\/09\/IMG_1430.jpeg 1280w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">This recipe should yield about 600g of finished sauce.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cooking<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">At service time, bring a large pot of salted water to a boil.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The ravioli cook extremely quickly because the filling is already ready to eat and you are really only cooking the fresh pasta. It looks like an italian dish but has extremely indian flavours.
