Nithya and I have had the pleasure of dining at <a href=\"https:\/\/www.thomaskeller.com\/perseny\">Per Se<\/a> and doing the French Laundry retrospective at Next, but we never managed to get reservations to the big daddy. However TFL moved to a ticket based reservation system last year and that allowed us to finally scored a dinner reservation for he birthday a few weeks ago.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/rnair\/39062819030\/in\/album-72157666832110148\/\" title=\"Tuna tartare cornet\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm5.staticflickr.com\/4775\/39062819030_3853712126_z.jpg\" width=\"480\" height=\"640\" alt=\"Tuna tartare cornet\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><br \/>\nThe first course was this cornet of tuna tartare. They usually serve this dish with <a href=\"https:\/\/www.flickr.com\/photos\/rnair\/5079551737\/in\/album-72157625036201733\/\">Salmon tartare<\/a> but this night it was tuna instead and just as delicious as before.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/rnair\/39978680075\/in\/album-72157666832110148\/\" title=\"Oysters and pearls\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm1.staticflickr.com\/799\/39978680075_656cb7668e_z.jpg\" width=\"480\" height=\"640\" alt=\"Oysters and pearls\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><br \/>\nNext we got the signature Thomas Keller dish, &#8220;Oysters and Pearls&#8221;. It consists of poached oysters served with a tapioca sabayon and caviar. While it may not sound that interesting, it has an incredibly rich and creamy texture that works incredibly well with the caviar. They have been serving this dish at TFL for more that two decades and even on my third tasting I have to say that this was probably my highlight of the meal.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/rnair\/39978680085\/in\/album-72157666832110148\/\" title=\"Celery root veloute with smoked duck and winter truffles\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm1.staticflickr.com\/785\/39978680085_09d921fa26_z.jpg\" width=\"480\" height=\"640\" alt=\"Celery root veloute with smoked duck and winter truffles\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><br \/>\nNext we celebrate truffle season by having a celery veloute with smoked duck and winter truffles. Like the tapioca sabayon before it, the veloute was another great example of perfect technique working with a relatively simple ingredient to give a great flavour.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/rnair\/39978680935\/in\/album-72157666832110148\/\" title=\"Turbot with trumpet mushrooms and curry banana emulsion\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm1.staticflickr.com\/793\/39978680935_168712e6a2_z.jpg\" width=\"480\" height=\"640\" alt=\"Turbot with trumpet mushrooms and curry banana emulsion\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><br \/>\nWe move on the first fish course which was turbot over trumpet mushrooms with a curry banana emulsion. The turbot had in interestingly salty flavour that worked well with curry banana. Not a huge hit but definitely worth trying.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/rnair\/39062817660\/in\/album-72157666832110148\/\" title=\"Scallop with saffron glaze and crispy mussel\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm1.staticflickr.com\/801\/39062817660_7e7c9e7814_z.jpg\" width=\"640\" height=\"480\" alt=\"Scallop with saffron glaze and crispy mussel\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><br \/>\nThen we come to the biggest fail of the meal. A scallop covered in saffron glaze served with a crispy mussel and potato puree. The scallop had a rubbery texture and the saffron glaze did not pair with it at all. To see a failure in both technique and creativity in the same dish was very disappointing. The crispy mussel and potato puree were great but this course was a definite flop and other diners agreed with me on this as well.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/rnair\/39062818920\/in\/album-72157666832110148\/\" title=\"Bread and Butter\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm1.staticflickr.com\/783\/39062818920_6961fa7256_z.jpg\" width=\"480\" height=\"640\" alt=\"Bread and Butter\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><br \/>\nThe bread and butter course was a &#8220;Parker House Roll&#8221; and was excellent as would be expected from the folks that run Bouchon backery.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/rnair\/39062817560\/in\/album-72157666832110148\/\" title=\"Bacon wrapped rabbit\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm5.staticflickr.com\/4774\/39062817560_4658a4c4bc_z.jpg\" width=\"480\" height=\"640\" alt=\"Bacon wrapped rabbit\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><br \/>\nFluffy was next on the menu &#8211; rabbit wrapped in bacon with dates carrots and walnuts. I&#8217;ve only had rabbit a handful of times and this once did taste quite good.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/rnair\/39062817640\/in\/album-72157666832110148\/\" title=\"Braised Lamb Shank | Saut\u00e9ed Garden kale and mustard bechamel\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm1.staticflickr.com\/797\/39062817640_da6b2eb419_z.jpg\" width=\"480\" height=\"640\" alt=\"Braised Lamb Shank | Saut\u00e9ed Garden kale and mustard bechamel\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><br \/>\nMy favourite of the &#8220;new&#8221; dishes on the menu was this braised lamb shank with sauteed kale and mustard bechamel. The lamb texture was spectacular and the meat was falling off the bone. The kale and mustard offered a great contrast with bitterness and bite which made this my favourite non Oysters and Pearls dish.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/rnair\/27002242018\/in\/album-72157666832110148\/\" title=\"Gougere - Cheese course\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm5.staticflickr.com\/4775\/27002242018_f554bedc22_z.jpg\" width=\"480\" height=\"640\" alt=\"Gougere - Cheese course\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><br \/>\nWe finish the savoury courses with the cheese course of a gougere over a black truffle fondue &#8211; great way to end.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/rnair\/39062818940\/in\/album-72157666832110148\/\" title=\"Desserts\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm5.staticflickr.com\/4776\/39062818940_557fbabe9d_z.jpg\" width=\"640\" height=\"480\" alt=\"Desserts\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><br \/>\nThe finale was a round of desserts including coffee and donuts, Italian birthday cake and ice cream. Coffee and donuts were the standout (another 20+ year dish) but the rest were nothing to write home about.<\/p>\n<p>All in all it was a decent meal but I have to say that it did not reach up to my expectations. The high notes of the meal (oysters\/pearls, coffee\/donuts, cornet) were all literally decades old and only the braised lamb shank came up to that level from the newer recipes. The scallop was a failure in both concept and execution and stood out even more since there were only 8 courses. I would expect that a restaurant considered to be one of the best in the world would have found more high points in the last 20 years and not depend on its greatest hits to save the meal.<\/p>\n<p>All in all I have to say our meal at Per Se (album below) was better and that the French Laundry wasnt worth the wait.
